Try this yummy Mushroom and Sausage Baked Gnocchi recipe.

This recipe serves 6 – 8 people.

Ingredients

  • ± 450g sausages of choice
  • 500g portabellini mushrooms, sliced
  • 1 large onion, diced
  • 4 cloves garlic, minced
  • Pinch of chilli flakes
  • 1 x 400g tin diced tomatoes
  • 250ml stock
  • Handful basil leaves, roughly chopped
  • 200g fresh spinach / Swiss chard
  • 500g store-bought gnocchi
  • 100g mozzarella, grated
  • 100g parmesan, grated
  • Fresh basil, for garnish
  • Salt and pepper, to taste
  • Olive oil, for cooking

Method

  1. Preheat air fryer to 180˚C.
  2. Place sausages in the air fryer and cook for ± 8 minutes for a chunky lamb/beef or pork sausage.
  3. Set aside to cool and then cut into chunky slices.
  4. Heat a drizzle of olive oil in a large oven-safe saucepan.
  5. Add the mushrooms and cook until golden. Remove and set aside.
  6.  Add the onion to the same pan and cook until tender.
  7. Add the garlic and chilli flakes. Cook for a minute until fragrant.
  8. Pour in the tomatoes and the stock.
  9. Bring to a simmer and cook for a few minutes while you prepare the gnocchi.
  10. Bring a large saucepan of salted water to the boil.
  11. Cook the gnocchi according to package instructions, and then drain.
  12. Add gnocchi to the pan of sauce along with the mushrooms, sausage, basil, and spinach.
  13. Mix well and taste to adjust seasoning.
  14. Preheat oven to 220˚C degrees.
  15. Scatter the top of the saucepan with mozzarella and then parmesan.
  16. Bake for 10 – 15 minutes until the cheese is golden and bubbling.
  17. Serve hot out of the pan with a crisp green side salad and enjoy!
