BUTTONS & BEANS • Breakfast doesn’t have to be BUTTONS & BEANS • Breakfast doesn’t have to be boring with this vegetarian buttons & beans on toast recipe 🍄 I tried this one yesterday (with a few adjustments to compensate for missing ingredients) and I was sooooo impressed 🤤

The recipe below serves 4, but I simply adjusted the quantities.

You’ll also find the full recipe on the website. 

Ingredients:

- 2 Tbsp butter
- 50g / ½ cup breadcrumbs
- Zest of 1 lemon 🍋
- 2 Tbsp Italian parsley, roughly chopped

- 1 large white onion, diced
- 2 cloves garlic, minced 🧄
- 2 x 400g tins butter beans, drained and rinsed
- ± 6 sprigs of fresh thyme
- 250ml chicken or vegetable stock
- Juice of ½ lemon
- 2 Tbsp fresh dill sprigs

- 2 Tbsp butter
- 250g white button mushrooms, sliced

- 4 thick-cut slices of sourdough bread
- Olive oil
- Salt and pepper, to taste 🧂

Method:

For the breadcrumb topping:

1. Melt butter in a frying pan. When sizzling, add the breadcrumbs.
2. Cook, stirring constantly, until golden brown.
3. Remove from the heat and place in a small bowl with the lemon zest and parsley.
4. Season to taste and mix well. Set aside.

For the beans:

1. Heat a drizzle of olive oil in a large frying pan.
2. Add the onion and cook until tender.
3. Add the garlic and cook until fragrant.
4. Add the drained beans, fresh thyme, and stock.
5. Bring to a simmer. Simmer until the beans are very tender and the liquid has reduced.
6. Crush a few beans as you stir to add more body to the sauce.
7. Switch the heat off and add the lemon juice and dill. Stir.

For the mushrooms:

1. Heat the butter with a little drizzle of olive oil in a large frying pan.
2. Add the sliced mushrooms and cook on high heat until just golden brown and still juicy and tender.
3. Season well with salt and pepper.

For the sourdough:

1. Brush the slices of sourdough with olive oil and season with salt.
2. Pan fry until golden brown and crisp on both sides.

To serve:

1. Stir the mushrooms into the beans just before plating up.
2. Serve generous spoonfuls of mushrooms and beans over the sourdough.
3. Finish with a sprinkle of the crispy, crunchy lemony breadcrumb topping and fresh dill sprigs.

I LOVE FOODIES • You’ll have noticed that we’ve been quiet. With lots of changes happening in our personal lives, it’s not always easy to give a passion project the attention it deserves. And with that comes the guilt - of letting all of you down, of letting I Love Foodies down, of forgetting all the beautiful things that running this page brings ✨ But we’re not ready to say goodbye - there is still magic to be experienced, and there’s still tons of good food to be shared 🍱

I first started I Love Foodies in Cape Town in 2015 - that’s 7 years of eating out, experiencing unforgettable moments, and diving into a world I didn’t know existed. Since then, the website and our social media channels have gone through various phases. We expanded to add in a team of writers and content producers based in Cape Town, Johannesburg, London, and New York 🌍 We ran a restaurant directory. We published ten articles a week. And then the pandemic hit and we scaled it all back down again. 

I Love Foodies started as a platform for me to share my love of food. And that got lost a little in the mayhem of this world. The hundreds of emails and requests for free advertising, the spam, the increasing costs of running a website - it all got too much, and I needed a little break. 

But I still love food. We still love food. And it’s time to come back to our roots 🌳

In the interim, I’ve moved over to London (though I still spend a lot of time in Cape Town). And at some point along the way, my sister @sabinepalfi got dragged into the foodie world. We now call her the accidental foodie. Over the next little while, we’ll be sharing content from both continents:

🇿🇦 Sabine will cover all the exciting foodie tidbits happening in Cape Town. 
🇬🇧 I’ll be sharing all the foodie treats from London. 

We’re here to share our personal journeys & the amazing things we’re experiencing. We’re here to deep-dive into the world of food, and, ultimately, we’re here to share all of it with you ❤️ I hope you’ll stick around. And I’m grateful that so many of you have.

@odette.olivier has recently joined as the new head chef, and the menu she’s created is definitely one to be excited about - interesting dishes, amazing flavours, and stunning presentation 🤩

Or, you know, eating, but I’ll take both 🤷‍♀️ Today, I’m looking back fondly on my buffet-style experience at the newest @lantanacafe branch in Fitzrovia, which serves the most drool-worthy lunches 🥰🥰🥰 I haven’t been enjoying buffets much since Covid first hit but there’s something too spectacular about looking at a range of dishes and choosing whatever your heart desires ❤️

And here’s a delicious Cranberry Gin cocktail recipe to help you make the most of it 🍸

Ingredients:

🥃 1 measure gin (2 if you like)
🫐 150 ml cranberry juice
🍋 10 ml lemon juice
🥤 3 dashes Angostura aromatic bitters
🧊 Ice cubes
🫐 Fresh cranberries
🌱 Mint leaves

Method:

1️⃣ Fill a tumbler glass with ice cubes, and pour the gin and lemon juice over the ice.
2️⃣ Top up with the cranberry juice, add the dashes of Angostura, and stir.
3️⃣ Taste and adjust the quantities to your preference.
4️⃣ Garnish with a few cranberries and mint leaves.

DO YOU COOK? I love cooking, of course - but I enj DO YOU COOK? I love cooking, of course - but I enjoy eating more 🤤 

When cooking, though, I tend to stick to tried & tested family favourites - goulash, stuffed paprika, spaghetti bolognese 🍝 I’m never bored, but sometimes I do want to try something new and exciting 🎉

So I was overjoyed when I made a salmon steak for the first time in my life the other day - and it was divine 😮 Gently seared on both sides with butter, herbs, salt, and pepper, and served on a salad of mixed leaves, cucumber, mushrooms, tomato, and yellow pepper 🐟🥒🍅🍄

And the best part? It took roughly 15 minutes to make ⏰

Healthy eating never tasted this good!!!
