We’ve all heard of the classic Bloody Mary – or even its sister tequila-based cocktail, the Bloody Maria. But have you ever had a clear virgin cocktail that’s based on the same principle? If not, then this Virgin Mary Consomme recipe is for you.

Like the Bloody Mary and the Bloody Maria, this Virgin Mary Consomme recipe is based on the principle that tomato juice with spices is insanely delicious. It is a mocktail, though, and eliminates the alcoholic addition.

This recipe is courtesy of The President Hotel, where we first tried this Virgin Mary consomme as a palate cleanser. We were lucky enough to grab the recipe to share with you.


  • 500g ripe tomatoes
  • 10g garlic
  • 5g basil
  • 50g celery
  • 50g onion
  • 5g salt


  1. Place all the ingredients into a blender, and blend for 5 minutes.
  2. Take a fine cloth or blue j cloth and place into a sieve over a bowl.
  3. Pour over the blended tomato mix and leave to strain in the fridge overnight.
  4. Once drained collect the essence from the bowl and use.
