The past two weekends saw the Street Food Festival return to two major cities in South Africa, Cape Town & Johannesburg, for the 5th time. This year, I Love Foodies had the privilege of attending in Jozi!

As longer summer days draw nearer, the last few kicks of the winter chill were in the air as we made our way to the trendy Maboneng district. There was a definite buzz in the air the moment you walked into the festival space. The festival offered live DJs, a wide variety of delicious food vendors, and Crate Talks. Almost every food flavour was on show, from craft rum, beer, gin, and juices to quench your thirst, to Mexican, dim sum, pizza, vegan treats, and more to fill your belly!

The Crate Talks

The Crate Talks had young food entrepreneurs speak about their food experiences in an interactive environment. Jozi saw speakers such as Vusi Ndlovu (Head Chef at The Marabi Club), Boitumelo Ramashaba (Thirst Trap Juices), Kgosi & Sfiso (LoCrate Market), and Mokgadi Mabela (Native Nosi) take the stage.

Nola Mayonnaise, one of the major sponsors of the festival, had their own installations in both cities, where chefs showed off how to use mayonnaise in your cooking to #MakeAStir. In Cape Town, Chef Lucia Mthiyane shared her expertise, but we up in Johannesburg had the delicious treat of enjoying Chef The Lazy Makoti.

Trying to show how mayonnaise could be incorporated into her cooking in unique ways, she made Breakfast Banana and Granola Muffins and Corn Fritters with Herb Mayo Sauce. I really enjoyed the corn fritteres, which I felt would be perfect as fresh spring tapas to serve at home, so I simply had to share the recipe with you all. Enjoy!



(Serves 4)


For the fritters:

  • 500g frozen sweet corn cooked
  • 150g self-raising flour
  • 2 eggs, beaten
  • 100ml Nola Original Mayonnaise
  • 4 spring onions, chopped
  • 20g parsley, chopped
  • 1 tsp cumin
  • 1 tsp cayenne pepper
  • Salt and pepper to taste
  • Oil for frying

For Nola herb mayo sauce:

  • 60ml Nola Original Mayonnaise
  • 30ml Greek yoghurt
  • ½ tsp garlic
  • 20g parsley, chopped
  • 20g mint, chopped
  • Also, 20g coriander, chopped
  • Salt and pepper to taste


  1. In a bowl, mix together flour, eggs and Nola Original Mayonnaise until smooth.
  2. Then, add the corn, onions, parsley, cumin and cayenne pepper, and season with salt and pepper.
  3. Heat oil and drop spoonfuls of the batter into the hot oil. Cook until puffed and golden.
  4. For the Nola herb mayo sauce, blend all the ingredients together.
  5. Serve with fritters and enjoy!
